Might want it on the server in larger installations.  GigE copper cards 
are cheap (~$50), though the uplink modules for the switch might cost 
you a pretty penny.  However, if you have more than 10-15 clients on the 
server, it might be worth it performance wise.

Another option is the linux bonding driver.  It doesn't work with all 
switches (and of course won't work with hubs), but it can let you get 
faster links without buying expensive GigE hardware.

Of course yet another option is simply multiple NICs and give each a 
different IP, then have a DNS round robin set up for when the client 
makes the initial request for the desktop session.
