  I'd be willing to do some firewall-y demos of what you can do with an
off-the-shelf FreeBSD install with two network cards, in the way of
transparent network bridging with firewall filtering using ipf.  I've
been running this style of firewall on my home network for about 7
years, first on OpenBSD, then on FreeBSD with ipf.  I also have a
dial-up backup kinda kludged together (not fully automatic,
unfortunately.)

  Unfortunately I'm not doing VPN; adding it would be nice, I've been
thinking about getting to it now that I'm out using my laptop more.

  I'd vote for Asterisk + fax server as the next sample project, I
would think those should go together nicely.  I've been planning to
build one of those myself, to leverage all the multi-function jacks I
installed around the house.

  I could also present sometime on setting up a Windoze compatible home
fileserver using samba; I've got that running on my other FreeBSD
server with ~ 200GB RAID-1.  My wife is just thrilled to be able to
just drag directories of her work files from her Windows folders onto
the file server folder to back them up.
