7.2 has nice improvements over 7.1 in all areas.  Mainly bug fixes, but some
very serious package enhancements in several areas.

Kernel - more stable, faster, more secure, more hardware supported
Firewall - (due to kernel fixes) more secure
KDE - Great improvements.  If you use Red Hat as a desktop, upgrading is
highly recommended.
Gnome - Gnome 1.4 included, including Nautilus for Gnome fans
... Latest versions of many development tools, server daemons and
everything.

You could stick with 7.1, download and install over 200MB of RPM updates
that overhaul most of your installation.  Or you could simply upgrade to Red
Hat 7.2, avoid the hassle and have even newer software.

You ARE upgrading your packages right?  No matter what distribution you run,
there are always many security advisories and bug fix package updates
available.  Many of those updates are IMPORTANT to protect you from worm
attacks.  (Last serious Linux worms nailed Red Hat 6.2 and 7.0.)  Keep
updating!

If you're thinking "How horrible!  So many update packages for Red Hat!"
Look at Mandrake.  Over twice as many security advisories, and the bugs...
the bugs...
Look at Windows.  Over ten times as many.
